Nuts & Bolts
of Event Planning
Come
to the Oak Hill Mansion for a luncheon full of
education to organize your business. Bill Knight,
CSEP will be speaking on the Nuts and Bolts of Event
Planning and how to utilize the Event Community.
Bill Knight is an Adjunct Faculty member with the
Event Management Program at The George Washington
University in Washington DC. Bill is the Immediate
Past President of the ISES DC Chapter and is a recently
elected board member of ISEF (International Special
Event Foundation). Get all the basics to organizing
your planning for your events in the future. Don’t

If
you missed the Wine and Food Pairing in September...
What an event that was put on by National Wine and
Spirits, Thomas Caterers of Distinction, 30 South Meridian
and Party
Time Rentals! For those of you that missed the event
here are a few of the great ideas that were given:
- Oak
is not a taste that you expect to find in food, so
save the oaky wines
for cocktailing
- Look
at the sauces in the food – red
wines with red sauces, white wines with white sauces
- Slightly
sweet wine with acidic or spicy foods
- With
dessert, make sure the wine is at least as sweet or
sweeter
than the dessert
- Try
a sweet red wine with chocolates
- Champagne
with wedding cake is one of the worst matches you can
make
- Wines
are starting to be corked with screw caps or synthetic
corks now for a better seal
- Temperature
of the wine is important
o White wines take out the refrigerator 15 minutes
before serving
o Red wines put in the refrigerator
15 minutes before serving
- Aging
wines are: Bordeaux, Cabernet, and Red Zinfandel

Brilliance Update
Business Brilliance 2004 is just around the corner!
January 26, 2004 at Indiana Historical Society from
5:30-8:30 p.m.
This
year’s event is expected to have at least 500
people in attendance. What better way to get your service
in front
of so many people then to be a sponsor for Business
Brilliance 2004. The Committee would like to include
as much of the
membership as possible in this year’s event.

Casey Scott – PACE Director
Casey Scott, has been involved in the hospitality industry
as a Event Planner for Hoaglin
Fine Catering for 7 years. During his tenure with Hoaglin
he has been a part of many dramatic
changes. Casey was hired as one of a seven-member team
based out of Cathedral
High School. The team expanded in 1998 with the
addition of 18 more members and a corporate
move to The Marott, providing 25,000 square feet of event
space and a tasting room in addition to sparking new corporate
offices.
With
these changes and the addition of Hoaglin To Go and its
sister company American Pie Catering, Hoaglin
Fine Catering is on track to a $1 million dollar increase
in sales in 2003.

has been an integral part of this dramatic success,"

Fine Catering Inc. Kyle Buckley said. "Never afraid to
roll up his sleeves and jump in, Casey exhibits a true

Casey’s
responsibilities and commitments include 90% of the Event
Planning at the Marott, lead

American Pie. Casey also has made a point of giving back
to our community as a part of many committees:
